THE BRIEF
Strip out existing deli and cafe and refit as a new Fego restaurant including a commercial kitchen and rear cold room extension.
THE CHALLENGE
The budget was very tight on this one as was the programme from acquisition to opening in time for Christmas which was especially important in this area. The neighbouring commercial properties had quite a bit of input on the scheme as Fego would be sharing the front pedestrian area as well as the rear car park and loading areas.
THE SOLUTION
Working closely with the Client's Ops team, design team and contractors we agreed various existing elements would remain but certain operational improvements must be made. Tracking the budget was crucial to ensure we understood exactly what our costs were from well before tender to be certain the targets could be met. Liaising with the neighbouring businesses, producing and adhering to an agreed materials and vehicle movement plans ensured our site works didn't have a negative impact on them but also ensuring there was no deterimental impact on the working programme.
THE RESULT
The restaurant opened early December to give the Client a good run of trade up to Christmas. This particular restaurant broke the records for the Fego business from opening and the trade was excellent, proving that success doesn't necessarily come from how much you spend but how and where you spend it.
